Acar
Javanese Coleslaw
Chinese cabbage
Total time: 2-½+ hours
Preparation time: ½ hour
Chilling: 2+ hours
½ cup water
1 cup cider or rice vinegar
2 tbsp. salt
6 tbsp. sugar
2 tbsp. minced ginger
2 cups halved, thinly sliced onions
8 cups shredded cabbage
2 cups peeled and shredded carrots
2 cups peeled, halved, seeded and thinly sliced cucumbers

Whisk together the water, vinegar, salt, sugar and ginger. In a large salad bowl, combine the onions, cabbage, carrots and cucumbers. Pour over the dressing, cover and refrigerate for several hours, tossing occasionally to distribute the dressing.
