You once were an unripe grape;
you ripened, and then became a raisin.
Moroccan Carrot & Orange Salad
Total time: 1-½+ hours
Preparation: ½ hour
Chilling: 1+ hours
1-½ cups raisins
3 lbs., peeled and grated carrots
4 oranges, peeled, pith removed, and broken into segments
6 tbsp. lemon juice
6 tbsp. orange juice
1 tbsp. cinnamon
Soak the raisins in hot water for 30 minutes, then drain. Combine the ingredients in a large salad bowl and mix well. Chill for at least an hour before serving.
