Day and night you are eager to hear stories,
while every part of you tells a tale of blessing.
Like ice born from the winter,
the winter fades, but the ice remains as a reminder of past hardship.
In December, a few precious fruits are a reminder of summer.
Atiat's Khoshaf
Date palm
Total time: 2-½ hours or overnight
½ cup sugar
½ cup coarsely chopped dates
1 cup dried figs, quartered
½ cup raisins
3 cups dried apricots, halved
1 cup walnuts
6 cups water or milk

Combine the sugar, dried fruit and walnuts. If you are using water, bring it to a boil, pour it over the fruit/nut mixture, and let it soak for at least 2 hours. If you are using milk, do not heat it; pour it over the fruit/nut mixture and let it soak overnight in the refrigerator.
