Now that the rose has faded
and the garden is ravaged.
Where shall the fragrance of the rose be found?
In rosewater.
Rose Syrup

Total time: 20 minutes
4 cups sugar
3 cups water
2 tbsp. lemon juice
4 drops pomegranate juice or red food coloring
½ cup rose water

Stir together the sugar, water and lemon juice in a heavy saucepan. Bring to a boil, lower the heat and simmer for 10-12 minutes, until the syrup coats a cold spoon. Add the pomegranate juice or food coloring and stir well. Remove from the heat and stir in the rosewater. Let the syrup cool completely, decant it into a clean quart bottle, and cap tightly.

To serve, pour several tablespoons over ice and dilute with cold spring water.
